I cannot be more excited about Wagyu from Norsemen Farm. I have never tasted a steak that was so good before in my life!

Rookie's Gamble Farm has again teamed up with our good friends at Norsemen Farm to help raise the largest herd of Wagyu Cattle in the State of New York!

What is so special about Wagyu?

Wagyu beef is a culinary masterpiece that has captured worldwide attention with its incredible flavor, tenderness, and marbling.


Originating from Japan, Wagyu beef is renowned for its superior meat quality. The breed is carefully raised and produces meat with abundant marbling, remarkable tenderness, and a luxurious flavor profile. Our beef is raised right here in New York, is primarily grass fed with grain supplementation. Even our grain is sustainably acquired- we use leftover grain from Springbrook Hollow Farm Distillery



The Secrets of Deliciousness:

Wagyu beef's irresistible taste can be attributed to its intricate marbling, where the fat is dispersed within the meat. This marbling creates a buttery texture and enhances the flavor, resulting in a mouthwatering experience filled with umami richness.

While Wagyu beef is typically grain-fed, our cows live on over 200 acres of lush green pasture, and get some supplemental grain. Cattle that graze on natural grasses and forage produce leaner meat with lower fat and calorie content. Grass-fed beef is also higher in essential nutrients like omega-3 fatty acids and CLA, along with antioxidants and vitamins. Our Wagyu is the best of both worlds, the health benefits of grass-fed beef with the rich marbling of Wagyu.
